I included some of these in my book Fast Cook, and they proved a popular way to get through supper on a Fast Day with minimum fuss. Not recipes so much as great flavour combinations, these trios can be grabbed from your fridge and kitchen cupboards on days when you just don’t want to think too hard about food. Use lemon juice, balsamic vinegar (I like it in spray form) or the basic Fast Day dressing (see below) where necessary. Then just add a plate, a fork and an appetite.

112 calories per tbsp1 tbsp lemon juice

1 tbsp white wine vinegar2 tbsp extra virgin olive oil2 tsp Dijon mustard1 garlic clove, peeled and left wholesalt and pepper

? Whisk ingredients together and keep in an airtight jar in the fridge. It will last for a week. Remove garlic clove before eating.
