Mimi Spencer's fabulous 5:2 beach diet: Courgette, pea and ricotta salad

Courgette, pea and ricotta salad

SERVES 4. 181 calories per portion


FOR THE DRESSING

zest and juice of a lemon2 tbsp extra virgin olive oil1 tsp runny honeysea salt and black pepper


SALAD

4 young courgettes, peeled into ribbons100g (3½ oz) just-cooked fresh or frozen peas100g (3½ oz) pea shoots200g (7oz) ricotta cheese


? Combine dressing ingredients, assemble salad and dot with teaspoons of ricotta. Drizzle  with the dressing and serve.
